Why not add a bit of originality with this revisited classic.

The Tom Collins is a Collins cocktail made from ginlemon juice, sugar, and carbonated water. First memorialized in writing in 1876 by Jerry Thomas, “the father of American mixology“, this “gin and sparkling lemonade” drink is typically served in a Collins glass over ice. A “Collins mix” can be bought premixed at stores and enjoyed alone (like a soft drink) or with gin.


  • 1 ½ oz of Conifère gin
  • 3 oz of 1642 Yuzu
  • 1 dash of fresh lemon juice
  • 2 sprigs of rosemary
  • Ice


  • Put the ice in an “Old Fashioned” style glass
  • Add the Conifère gin, 1642 Yuzu and lemon juice
  • Finish with a sprig of rosemary
